Gluten-Free Blueberry Muffins: Moist, Fluffy, and Delicious

Ingredients:

  • 2 cups gluten-free all-purpose flour
  • 1 cup fresh blueberries
  • 1/2 cup sugar
  • 1/2 cup unsweetened applesauce
  • 2 eggs
  • 1/2 cup milk (dairy or non-dairy)
  • 1/4 cup melted coconut oil
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp vanilla extract

Instructions:

  1. Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, mix eggs, milk, applesauce, coconut oil, and vanilla.
  4. Combine wet and dry ingredients; fold in blueberries.
  5. Divide batter among muffin cups. Bake for 20-25 minutes until golden.
  6. Cool before serving.
